After over one thousand recipes I am now committed to teaching people how to use food for better health. In 2022 I completed my functional nutritionist certification with Andrea Nakayama at Functional Nutrition Training and am excited to share everything I have learned.
How to Make Mango Pickle at Home Easily | The Frugal Chef
I want to show you how to make mango pickle at home easily. Pickled mango is delicious chopped inside tacos, salads, fruit salads or as a snack. You can start eating these within hours but I recommend you allow them to pickle for a good five days. The recipe is below -

Ingredients -
1 cup water
1/2 cup white vinegar
1 teaspoon salt
1 teaspoon honey
1 large mango - make sure it is not super ripe and soft
Red chili peppers - optional
4 to 6 peeled ginger slices
Equipment -
1 sterilized jar with a lid
Instructions -
Place the water, vinegar and salt in a small pot and heat, stirring constantly, until the salt dissolves. Turn off the heat and add the honey. Stir until it dissolves and set aside.
Stand the mango on an end and cut off the sides. Slice them into strips and peel them. Place them into the jar. Make sure to use the fruit around the pit as well.
Add the chili peppers, if using, and the ginger. Top with more mango slices, pressing everything down so that it is tight (ish).
Add the liquid, making sure you cover all of the mango. Allow the liquid to cool down completely and cover the jar. Refrigerate for about 5 days. You can eat these sooner than that but 5 days seems to be the minimum to get the appropriate tartness.
Keep the mango pickles in the refrigerator for months.

Hey..mine looks different mine looks like brown seeds
I managed to cook the eggs really well. However, I had a lot of trouble peeling the eggs. The egg white would start to split, letting the yolk pour out, when try to pull off some pieces of the egg shell. iI guess this is because the egg is still quite soft, despite having been cooked. Any suggestions>

When I moved to Mexico I had crazy high cholesterol, which led to non-alcoholic fatty liver disease. I also had IBS, arthritis, borderline blood sugar and was clinically obese. The locals (my Nutritionist, MD, grocery store owner, etc) told me to eat nopales. I have a raw nopales smoothie everyday. I have lost 40 pounds, blood chemistry is good and arthritis and tummy problems much better! It does not taste good…like raw green beans and cucumber. But not terrible. Adding fruit is just a waste of good fruit. The trick is to blend and drink fast, before the slime has a chance to gel. The slimy juice is like aloe vera, but that is the healthy part! Nopales is life changing!
